We both love our steak and chips, so to celebrate national chip week, we thought we would take a stab at making a batch of triple cooked chips.  This was our first ever attempt of making triple cooked chips and with a rib eye steak sitting in the fridge, it was time to get started with our steak and chips masterpiece.  To marinate the steak we decided to use Guinness mustard seeds which we picked up in a recent visit to the Guinness Storehouse.  While we were looking forward to tucking into the steak, it was time to get started with the triple cooked chips – they take about 2 1/2 hours to get ready!!!

Sometimes there is nothing nicer than the classic roast chicken.  A popular choice for the Sunday dinner table across the country, the combination of the nation’s favourite meat, with a crispy skin is something for all the family to look forward to.  Fresh from our visit to Belfast’s St Georges Market, we decided to treat ourselves to a nice Sunday roast, using a whole chicken picked up on the day.  We married our chicken with a lemon and parsley infused butter, to achieve the perfect crisp skin, and a tender moist chicken.  To accompany this chicken we served up a helping of cubed rooster potatoes marinated in lemon, garlic and sage.  Here’s how we did it.

Homemade blueberry and white chocolate muffins

After recently perusing through our culinary library, we decided to pull out an old faithful – Delia’s Cakes.  When it comes to baking, it’s hard to look past Delia and she has been a cooking inspiration to Helen for years.  We recently visited Belfast’s St George’s Market (review to follow) and we picked up some amazing fresh fruit, including a punnet of blueberries.  We decided to put these blueberries to immediate use by replicating Delia’s blueberry and pecan muffin cake although we did make some slight changes to the recipe and decided to go with white chocolate instead of pecans.  Delia’s recipe makes a cake, while we decided to make a scrumptious batch of muffins.  We also drizzled our muffins with some local honey before baking them.  Muffins are a sure fire winner in our house and no doubt a popular choice in homes throughout Britain and Ireland, so let’s take a look at how to make them.

Roasted red pepper and chick pea hummus recipe

Having recently made our very own focaccia bread, we decided to serve it up with some homemade hummus.  The focaccia bread can last for 3 – 4 days, so this recipe allowed us to make a tasty snack to finish the remainder of the focaccia.  Helen often makes a lemon, garlic and chick pea hummus, but as we had some baby red peppers to use up, we decided to make a roasted red pepper and chick pea hummus.  The roasted red peppers add an earthy sweetness to the hummus, and is extremely easy to make.  For fans of hummus, this is a increasingly popular twist on the classic hummus combination of garlic, lemon and chick peas.  Let’s get started.

Sometimes there’s nothing quite like the smell of freshly baked bread.  Just think of the memories you have from visits to your local bakers.  It can however be a time consuming process to make bread, and as we highlighted in our 10 minute mid-week soup, time is something that is not always on our side when it comes to cooking.  We’ve recently come across a great recipe and put our own twist on it, to make a quick and easy yeast free bread that you can make anytime.  This bread is perfect for soup and stews or as a great accompaniment to a starter of humus or dipping oils.

We’ve both got a bit of a sweet tooth and these German biscuits are certainly high on our list of sweet treats that we love to bake over and over again.  An easy to follow recipe, these German biscuits will make a great treat for you to enjoy with your daily cuppa, or the perfect biscuit to take out when friends or family call round.  It’s also a great recipe to try and cook with the kids.  Although they are traditionally round, at Christmas, Easter and Valentines, we like to use different shaped cookie cutters to fit the time of year.  We hope you enjoy making these and can guarantee you, you won’t be disappointed with the taste!!

Following on from the success of our breakfast waffles with caramelised bananas, we thought we’d try our arm at a savoury dish this time, and what better combination than bacon and eggs.  If you’re a fan of bacon and egg butties then you’ll love this twist on a British and Irish breakfast favourite.  The salty, crispy bacon complements the sweet, soft waffle, and the runny fried egg is perfect for dunking the waffle into.  Get your dunk on!!

This latest recipe is one that only takes about 2 minutes to make but is a great way to start the day.  Smoothies are becoming an increasingly popular and affordable breakfast that you can take with you on the road, especially if you commute to work on a daily basis.  It’s also a great way to ensure you are well on your way to 5 a day and also helps you get important vitamins and nutrients to get your body started for the day ahead.  In this smoothie we added some milled flaxseed and goji berries from Linwoods.  These are a great source of protein and fibre and another way to provide your body with a great boost to start the day.
