If you’re a regular visitor to our site and like to browse through our recipes you’ll know that we are fans of not letting food go to waste.  Food like bread, milk and fruit, can very easily go past it’s best before date without even knowing and for many people this means only one thing – straight to the bin.  With some nectarines and peaches lying in our fridge for a few days, the time had come to actually find a use for them or throw them out.  We would never want to throw out such great produce, so we decided to make a summer fruit dessert. As you know we’re big sweet fans here at Pikalily, and with a loaf of bread in the bread bin needing used up, there was only one thing we wanted to make this weekend in the Pikalily kitchen – a bread and butter pudding.  We decided to make a bread and butter pudding with a bit of a twist, and with spring here and the days getting noticeably longer and warmer, we wanted something zesty to enjoy with our Sunday lunch.  The answer to this was lemon curd, so we set about creating an easy yet tasty lemon curd bread and butter pudding.  Here’s how we did it.

You have probably picked up on the fact that Nial and I have a very sweet tooth!!  As the days continue to get colder and wetter, it’s time to bring out an old faithful recipe; Sticky Toffee Pudding.  This is my favourite sticky toffee pudding recipe and I’ve been baking it for a few years now.  It actually came from a James Martin book but I can’t remember which one now!!  It’s a truly rich pudding but not overly sweet.  It’s very easy to make, and also something which you will have fun doing.  The cake itself is extremely moist and it is a very comforting dessert that is perfect for these long winter evenings.  There’s plenty of toffee sauce with this recipe so if you have any left over, it’s a perfect accompaniment to vanilla ice-cream.  We’ll be sharing our own homemade vanilla ice-cream recipe soon so keep an eye out for it!  The sponge and sauce can be made in advance, and the sponge can even be frozen, if you wish to prepare it in advance of a big dinner party or meal with friends and family.  Both the pudding and toffee sauce can be plated up and re-heated from frozen in the microwave.
