Last week we got a wonderful Easter meat pack from the great folk at Lynas Foodservice.  It was our first trip down to their Beflast food outlet store and we were left more than impressed by the great selection of food on offer, particularly the meat section.  We left with a frozen leg of lamb, pork butt and beef brisket, along some packets of vegetables, ready to make a number of Easter feasts.

Lasagne is a favourite dish in our house as it’s full of flavour and a meal in itself. We like to make extra lasagne for enjoying the next day or putting in the freezer for a later date. Although this recipe makes a large lasagne suitable for 6 servings, you could make little individual lasagnes too by altering the ingredient measurements. While many people rush out to the shops to buy ready made tomato sauce and béchamel sauce for their lasagne, our recipe uses fresh ingredients to make these sauces. Read and enjoy.

We both enjoy tucking into the odd bowl of pasta during the week and while the Dolmio pepperoni stir in sauce was a firm favourite of Nial’s in his uni days, these days we like to make our own sauces from scratch.  All the ingredients you need to make a great pasta sauce are readily available in supermarkets with tinned tomatoes being a favourite of ours and a great base for any tomato based pasta sauce – you can never have too many in your cupboard.  While looking for sauce ideas online, we recently came across a company called UFUUD, an Italian based company who produce a range of great traditional Italian food and drink.  We ordered some Italian products online and got to work creating our own meatball and tagliatelle dinner from scratch – here’s how we did it.

Guinness mustard marinated steak with triple cooked chips

We both love our steak and chips, so to celebrate national chip week, we thought we would take a stab at making a batch of triple cooked chips.  This was our first ever attempt of making triple cooked chips and with a rib eye steak sitting in the fridge, it was time to get started with our steak and chips masterpiece.  To marinate the steak we decided to use Guinness mustard seeds which we picked up in a recent visit to the Guinness Storehouse.  While we were looking forward to tucking into the steak, it was time to get started with the triple cooked chips – they take about 2 1/2 hours to get ready!!!
