We were recently chatting with the guys at Phipps PR about the versatility of using beer in home-cooking, something we’ve used on many occasions.  We’re really enjoying cooking with chicken thighs at the minute as they flavoursome and moist and lend themselves perfectly to so many dishes.  We recently cooked some BBQ glazed chicken thighs which involved us cooking the chicken in the actual glaze.

We recently came across this recipe online at M&S and tried it out at the weekend, one word; delicious!! It’s really easy to make and can be made in around 40 minutes. The glaze creates a lovely sticky coating for the chicken and although the recipe uses chicken thighs, it would work equally well with breasts, wings or drumsticks. You may wish to experiment with other meats as well. The thighs we used were from M&S and were boneless and skinless, making them hassle free.

We both enjoy tucking into the odd bowl of pasta during the week and while the Dolmio pepperoni stir in sauce was a firm favourite of Nial’s in his uni days, these days we like to make our own sauces from scratch.  All the ingredients you need to make a great pasta sauce are readily available in supermarkets with tinned tomatoes being a favourite of ours and a great base for any tomato based pasta sauce – you can never have too many in your cupboard.  While looking for sauce ideas online, we recently came across a company called UFUUD, an Italian based company who produce a range of great traditional Italian food and drink.  We ordered some Italian products online and got to work creating our own meatball and tagliatelle dinner from scratch – here’s how we did it.

Duck really is one of our favourites and it’s important to ensure you get a real quality piece of duck when cooking this particular type of poultry.  When it comes to finding quality duck in a supermarket, it’s hard to look past Gressingham duck.  Gressingham have a great variety of duck recipes as well as recipes for other poultry including turkey and goose.  Regulars to the blog will know that we enjoy duck, especially when we dine.  Duck a l’orange is a classic dish and taking inspiration from one of Glessingham’s own recipes we put a bit of a twist on this classic dish.  Here is our duck a l’orange with honey and thyme glazed chips.

We recently added a new kitchen appliance to our ever growing collection of tools in the form of a Tefal Fresh Express Fruit and Veg Slicer.  We tested it once we got it with some apples as we couldn’t wait to get trying out the 4 attachments – 1 that slices, 1 that grates and 2 that shred.  We were instantly impressed and have since been putting it to good use in the kitchen, none more so than our recent potato rosti creation which we are going to talk about today.

Chinese takeaways can be found in most towns in Northern Ireland, and it’s easy to see why.  There’s just something special about Asian cuisine, and when it comes to Asian food in Northern Ireland, it’s Chinese influenced dishes, restaurants and takeaways that lead the way.  We enjoy the odd Chinese takeaway ourselves, but recently we’ve been trying to be good and cut down on eating fast food.  Just because we have stopped going to the takeaway shops, doesn’t mean we can’t still enjoy our favourite dishes.  The solution is simple – make them ourselves!

This tartlet is a really fresh and flavoursome dish that is perfect for a light lunchtime snack, or can be a great dinner when accompanied with a healthy side salad, and seasoned potato wedges.  Unlike our previous sweet blueberry and lemon mascarpone tart, this is a savoury dish, so you can always experiment with your flavours.  The pastry we used for this was Jus-Rol ready rolled puff pastry.  Follow our steps below to make your own tasty savoury tart.
