We all end up with leftover turkey at Christmas in which its fate is usually a Boxing Day curry. But after eating so much rich food during the Christmas period it’s nice to enjoy something lighter. This salad takes inspiration from a Rick Stein recipe in which he uses Chinese cabbage and Vietnamese mint leaves. This is a really fragrant and refreshing salad, and it is perfect teamed with the crispy, salty pancetta pieces. To add more crunch you could add some chopped peanuts.

This recipe uses pre-made pitta bread and can be made from start to finish in under 10 minutes.  Garlic bread is a great accompaniment for many dishes and this garlic pitta bread is a great alternative to garlic baguettes that many of us tend to enjoy.  Not only is it a healthier option, but pitta bread is relatively cheap allowing you to create individual slices for friends and family as you dine.  The inspiration for this came from a meal we enjoyed in Coté Restaurant in Brighton, and as we had some pittas that needed used up, this was a quick side to eat with a chicken salad we were preparing.

Barbecue Glazed Sticky Chicken Thighs

We recently came across this recipe online at M&S and tried it out at the weekend, one word; delicious!! It’s really easy to make and can be made in around 40 minutes. The glaze creates a lovely sticky coating for the chicken and although the recipe uses chicken thighs, it would work equally well with breasts, wings or drumsticks. You may wish to experiment with other meats as well. The thighs we used were from M&S and were boneless and skinless, making them hassle free.

We’re both big fans of Spanish cuisine and have enjoyed visits to some of Spain’s culinary hotspots, including the home of tapas, Barcelona, and the home of paella, Valencia.  We often take inspiration from our travels when it comes to making dishes in the house, and with potatoes, eggs, peppers and chorizo sitting in our fridge and cupboard, our minds went back to a Spanish omelette we enjoyed in Valencia, so we have decided to recreate this dish.  Obviously you can use different ingredients to make your very own Spanish omelette, but we both enjoy the flavour of chorizo and would strongly recommend trying it out.
