Barbecue Glazed Sticky Chicken Thighs

We recently came across this recipe online at M&S and tried it out at the weekend, one word; delicious!! It’s really easy to make and can be made in around 40 minutes. The glaze creates a lovely sticky coating for the chicken and although the recipe uses chicken thighs, it would work equally well with breasts, wings or drumsticks. You may wish to experiment with other meats as well. The thighs we used were from M&S and were boneless and skinless, making them hassle free.

Ingredients:

  • 8 chicken thighs
  • 4 tbsp M&S smokehouse tomato ketchup (or regular ketchup if you haven’t got a smoked version)
  • 4 tbsp soy sauce
  • 4 tbsp balsamic vinegar
  • 4 tbsp honey
  • 1 tbsp M&S brewer’s paste (you could substitute this with Marmite or beef Bovril)

1. PREPARE THE CHICKEN THIGHS

Heat the oven to 160°C/140°C fan/gas 3. Rinse the chicken and pat dry. Place the chicken in a shallow dish.

2. MAKE THE BBQ GLAZE

To make the glaze, mix the ketchup, soy sauce, balsamic vinegar, honey and brewers paste together in a bowl. Pour the glaze over the chicken thighs, turning to ensure they’re well coated.

3. COOK YOUR CHICKEN

Put the chicken on a baking tray and cook in the oven for 35 minutes, or until cooked through and the juices run clear, occasionally spooning over any leftover glaze to form a sticky coating.

Top Tip: For extra flavour, try finishing your chicken thighs on a barbecue.

4. SERVE AND ENJOY!

Serve the barbecue glazed chicken with salad and a crusty baguette.

 

This dish is great for a starter meal for two, perfect as a snack for a dinner party or right at home on a summer BBQ.
