This cake is perfect for those of you who are just getting into baking. It is an all in one batter that you simply bake, drizzle and enjoy. It’s also a perfect way to introduce your kids to baking, something we would certainly encourage of any parent. We used lemon for our cake as it provides a zingy spring like flavour, but you could get away with using other citrus fruits like orange or lime. This fluffy textured cake is perfect served warm or cold and is extremely hard to resist!
Ingredients:
For the batter mix:
- 225g (8oz) butter at room temp
- 225g (8oz) caster sugar
- 275g (10oz) self raising flour
- 2 tsp baking powder
- 4 eggs
- 4 tbsp milk
- Zest of 1 lemon
- 2 tbsp lemon curd
For the glaze:
- 85g (3oz) caster sugar
- Juice of 1 lemon
Preparation time – 10 minutes
Cooking time – 35-40 minutes
Serves 16-18 slices
1. Prepare the cake batter
Pre-heat the oven to 180C (160C fan oven) and grease and line a baking tin. Put all the cake ingredients into a large bowl and beat for 2-3 minutes until it becomes a smooth batter like mix. Adding the lemon curd to the batter adds extra flavour to the finished cake.
2. Bake your cake batter
Scoop the cake batter into your baking tin and spread evenly. Place the tin in the centre of your oven and cook for 35-40 minutes. Place a skewer in your cake to check that it is cooked all the way through. Your cake will be cooked if the skewer comes out clean. Once baked, set aside and leave to cook for a few minutes before adding the glaze.
3. Make your lemon glaze
Heat the lemon juice and sugar over a low heat in a pan until the mixture is dissolved. Your glaze is now ready to spoon over the warm cake. The heat of the cake will soak up the syrup. Serve and enjoy.
The lemon drizzle cake is great to take on its own or with some clotted cream on the side.
