We had a bunch of ripe bananas sitting in the kitchen so we decided to take some inspiration from the latest Great British Bake Off show by creating over very own flavoured donuts. This recipe isn’t a traditional donut recipe, however the result is a light and fluffy, moreish donut that takes minutes to prepare. A great way to use up ripe bananas and a treat that all the family can enjoy. If you have kids this will be a great recipe to cook with them – who doesn’t like donuts 🙂
Ingredients
- 100g ( 3 1/2oz) self raising flour
- 1 tsp baking powder
- 4-5 tbsp sparkling mineral water / soda water
- 2 ripe bananas, mashed
- 1 tsp vanilla extract
- Dark chocolate, melted (for dipping)
- Caster sugar for dusting
Cooking and preparation time 10-15 minutes
Serves 3 – 4 people
1. Heat the fryer
Before beginning, turn on a deep fat fryer and heat at 180°C. Ensure you are using clean vegetable oil and remember to always take care with hot oil.
2. Prepare your donut batter
Mash the bananas and set aside. In a separate bowl, whisk together the baking powder, self raising flour and sparkling water until smooth. The mix should not be too wet. Add the vanilla extract and mashed bananas and stir through.
3. Make your chocolate dip
Before frying your donuts, melt some dark chocolate over a pan of boiling water or in a microwave. Once melted set aside to serve with the donuts.
4. Fry your donuts
Scoop large spoonfuls of the mixture into the oil cooking no more than 3-4 donuts at a time. Cook the donuts for 1-2 minutes before flipping over, to ensure an even golden colour. Cook for a further minute until both sides are golden and carefully remove from the oil. Place on to kitchen paper and allow to drain. Sprinkle some sugar over the donuts and serve with the chocolate dip.
Additional serving suggestions
- Add a splash of coconut rum to the melted dark chocolate
- Using a pipping bag pipe some chocolate ganache into the centre of your donuts
- Serve with ice cream and hot chocolate sauce
