We recently made one of Helen’s Mum’s favourite desserts for Valentine’s Day, Chocolate Raspberry Towers.  We had forgotten how nice they were and we thought that the recipe would work really well as a layered dessert.  We’ve made a few changes to the recipe to allow for this.  Although the dessert uses crème de cassis and dark chocolate it is extremely light and refreshing. Peach and Mint Crumble

This recipe came about as a way of using up some stoned fruit and a few sprigs of fresh mint in the fridge. We wanted something warm and satisfying on a particularly cold and wet summer evening. The addition of mint leaves adds a subtle freshness to this warm dessert and makes it a little more summery. For the crumble topping we added some ground almonds for extra flavour. We served our crumble with some good quality vanilla ice-cream and a almond praline crumb. This dessert is perfect for any time of year and won’t take long to whip up. Check out the recipe below.

One of our favourite weekend breakfasts is to enjoy some homemade crepes or pancakes.  Sweet or savoury, they are always a popular choice in our house and rarely will there be any left at the table after we have dished up a serving of crepes / pancakes.  Perhaps our favourite way of enjoying pancakes is to serve them with a helping of summer berries and some fresh cream.  Strawberries, blackberries and blackcurrants are all perfect accompaniments for pancakes throughout the year, but especially during the summer months when they are at their freshest.  This weekend we had a bit of a lazy one and opted for some ready made pancakes from a local supplier Genesis Crafty, and it’s fair to say they were a bit of a treat.

We enjoy baking here at Pikalily and so long as you have a few eggs and some butter, sugar and flour, you can pretty much bake anything.  Last week we had a few ripe bananas, which in many homes tend to find their way into the bin.  We try to use rather than waste, so we decided to take these bananas and make a simple yet tasty banana bread.  Banana lovers out there, this is one recipe you need to be sure to bookmark.  Another ingredient we used in this bread was Linwoods flaxseed, cocoa and berries mix, something we regularly use when baking in the kitchen.

This is a delicious, zesty spring / summer tart that would make a great dessert or sweet treat for all the family.  Fresh blueberries work really well in this recipe and go perfectly with the lemon mascarpone mix, but you could easily replace the blueberries with any fruit of your choice.  The pastry we used for this was Jus-Rol who have some great pastry recipes to try out on their site.  Check them out here.
