2 Minute Guacamole Recipe

Guacamole and nacho recipe - Pikalily Food Blog

Guacamole is a really tasty dip that is perfect with nachos or a nice addition to a wrap.  There is very little work in creating a guacamole and the end result is a zingy, fresh and full-flavour dip.  Below we take you through the steps to making a quick and easy guacamole straight from your own kitchen.

Ingredients

  • 1 Avocado
  • Squeeze of lime juice (lemon juice will also work)
  • 1/2 Red chilli, de-seeded (or 1/2 tsp of chilli paste)
  • Handful fresh coriander, chopped
  • Sprinkle rock salt

Prep time: 2 – 3 minutes

1. Preparing your avocado

Cut the avocado in half and remove the stone.  Score the flesh on the inside and use a spoon to scope it into a bowl.  Mash the avocado with a fork leaving a few small chunks of avocado for texture.

2. Add the remaining ingredients

Chop the coriander and red chilli and add it to the avocado mix.  To this you then add a fresh squeeze of lemon or lime juice and a sprinkle of rock salt.  Stir and taste and adjust seasoning if needed – extra chilli if you need more heat and extra lemon / lime juice if you want more zest.  Serve and enjoy – we recommend nachos with melted cheese, sour cream and a fresh tomato salsa.
